Either chop the fuck out the HD or go hunting in the spring for an old "find"

Ed it is up to you. If you want a chop I say lets stick with the try 60-70s bikes and do a British Bike or HD.

Now I have wanted to build an XS650 tracker for a while.

I've had two XS650s they are fun bikes and easy to kick start.

Don't do much more to your HD besides maybe a solo seat or a king and queen.
