Just get legal proof of insurance ASAP and you should be fine.
No one will predate insurance (legally).

Dude, you may be screwed here. but i would definetely go get the insurance now, go to court and hope that the judge is in a good mood and just says don't do it again. other wise you may just get a fine or two.

I see you've been riding for 3 years... I hope you had insurance at ONE point durring those three years. Why didn't you have insurance this time? Did you just get the bike? Is this your only bike?

Best and pretty much only excuse is to say that you let it lapse. In the meantime - get insurance and bring that proof/policy with you to the courtdate. Be polite and put on the air that you are doing the best you can about it.
