Buffalo is very lean and needs to cooked very very rare or it will taste and have the consistency of old leather boots.

Unless you have some health condition that prevents you from eating regular beef, I would not recommend eating buffalo. Ostridge is not any better. Give me a hunk of fatty American cattle any old day.

you get get it from a grocery store but you will have to special order it. I have gotten it from jewel or dominicks before-- I can't remember. I was on a buffalo kick after I moved back from MT and has spent three months eating it. YOu might check omaha steaks-- if they don't sell it, they might know where to get it. The folks that work at the SOW one are pretty nice.

There are also places on the internet to buy some. YOu might get best quality going that way. I haven't gotten any in a while (buffalo, that is) so I can't help you any more than this.

And I disagree about both buffalo and ostrich. Both are tasty leaner alternatives to beef. But you will pay for it-- and he's right, both are harder than beef to cook properly. (And ostrich is easy to find around there-- even Ruddfucker's sells it)
