You sure it's not soy milk? In third world countries where refrigeration is not alwauys available, milk comes in two forms, soy milk and powder form.

There is no way you can not refrigerate dairy milk without it turning into curds in no time at all.

Wait a minute... do you guys think Cows are kept refrigerated?



Milk has to be refrigerated after it has been Pasteurized, if you do that yourself then you can buy it from a place without it being refrigerated. It is just a matter of boiling it like you would water. With that in mind, Milk is always perishable, so the milk sitting witout refrigeration does not last forever either.

You don't need to referigerate a cow as the udder milk is sterile. Once it leaves there though, bacteria will work it's way into breaking the protein strands and processing the sugars. Pasteurized or not, the milk won't last long unless it is chilled.

Aseptic milk processing has been used for years in countries that don't have alot of refrigeration. Basically, instead of your standard pasteurization process with quick disconnect connections for cleaning, they use steam at any point where air could possibly get in touch with the milk. I believe they also elevate the "pasteurization" time a bit so that the milk cooks a little hotter. Then they dispense it into packaging that has been steam sterilized. It's a very expensive process compared to standard pasteurization and I think the shelf life is something like 6 to 8 months, but I don't remember exactly. The downfall is the taste of the milk. If you ever tasted the difference between fresh milk from the cow and pasteurized milk from the store, the difference is very noticeable. The same goes between pasteurized and aseptic processing. Because it's cooked hotter and longer, it affects the taste. Unless of course they've changed milk in the last 6 years.
