white chicken and corn chili

1 large onion chopped
1 lb chicken breast
3 cups chicken broth
1 large green pepper chopped
2-3 jalapeno chopped... See More
1 1/2 teaspoons ground cumin
1 can diced tomatos with chilies drained
2 cups frozen corn (thawed)
2 cans white beans (I used navy beans) drained and rinsed
cheese and sour cream for topping

In slow cooker, add broth, chicken, green pepper, onion, and jalapeno, cumin. Cook 4 hours on high, or 6 hours on low.

Remove the chicken breast, and allow to cool slightly. Add the beans, tomatos, and corn to the slow cooker. Shred the chicken and return to the slow cooker. Allow to cook on low about 30 mins.

I serve this with jalapeno cheese corn bread, or grilled cheese.

Top with cheese, sour cream, more hot peppers. Yum!

Can you elaborate on this ingredient, I don't think I've seen it before. Is it a can of tomatoes with chili peppers in it or is my definition of chilies incorrect:

1 can diced tomatos with chilies drained

The nice thing is the soup has a little zip to it, so everyone can eat it. But if you add some tobasco, the flavor of the soup remains, but has a nice flavor and heat to it.

Look for the Red Gold brand, yellow cans.

'drained' means just that... drain the excess juice (strainer or use the opened lid as a cover to hold the product in the can, but let the juice drip off...

The tomatos have some sort of peppers in them. They come as rotel, or with jalapenos. I know that there were several to choose from at the store. You can also use just plain tomatos and add an extra pepper at the beginning.

Also this had almost no broth when it's done. If you want more of a soup add a few additional cups of broth. As it is it's more of a chili. If you want it thicker, just mash a few of the beans before adding them to the crock.

Thanks, this is in the crockpot at this very moment, I had everything for this already in the house. Even a can of fire-roasted dice tomatoes with green chilis from Trader Joes.

Only adjustment I made was I replaced the cumin with chipotle chili powder.
