I'm always looking for ways to change up the old standby dishes that my family loves. Tonight I made a beef and bean soup, with a tomato base. It's a favorite of my mom and step-dad, and it's hearty, filling and fairly healthy. I usually make cornbread to go with it. I've been known to toss in some fine shreded cheese and jalapeno slices, it's good and really adds a kick to the soup. Well tonight after I had already made the cornbread batter I discovered I only had shreded mozzarella cheese, and a brick of pepper jack cheese. I decided to chop the brick into cubes and add it to the cornbread. It was amazing. My parents both agree it's better than anything other way I've made it in the past. The cubes melted but stayed in small pockets of the bread, so in some bites you got a nice bite of melted cheese, others was just warm cornbread. It worked really well. Anyone have any other simple things you've done to spice up a basic dish, or recipie?

Funny you posted this; I just made cornbread last week with bacon. I had some cooked, left over in the fridge, I needed to get rid of so I tossed it into the cornbread. It was fantastic.
Of course, I served it with chicken wings and my husband said I was a total redneck.

Another thing I do a lot if I'm low on pasta noodles (or just want to lower the relative amount of carbs) is I throw a can of white beans into whatever pasta dish I'm making. Did it once as a last minute fix, and have kept it around since it worked well.

Brian, being from the south I LOVE cornbread. But that sounds amazing. I also love the corn dish Jarod makes with the white corn, yellow corn, cream cheese, cheddar cheese, and hot sauce. Sooo good.
