Ring Around The Salmon

so i have no idea what this recipe is for or if it even has a name, i only called the thread title because really lookin at my plate everything is focused around the salmon :P

anywho my friend and i were sharing some food for thought with this whole healthy eating habit weve picked up and he gave me this. its just salmon, brown rice, and veggies

atlantic salmon:

1) set on aluminum foil, cover in lemon juice, olive oil, and bit of water.
2) season, i did some seasoning salt/buttrub and crushed red peppers
3) preheat oven to 350 degrees and stick the salmon in for bout 35-40 minutes

brown rice:

1) 1 cup of brown rice, 2 cups of water, tablespoon of oil
2) high flame to boil, then simmer/low flame for 35-40 minutes to cook along side salmon
3) when done drain and add some butter/margarine

veggies:

1) spray pan with organic/lowfat pam and some veggie oil
2) sautee the veggies!

then pour out the rice, circle the plate with veggies, and lay the salmon on top. salt/pepper to taste (i added some tabasco sauce too!) and let some of the juice from the foil drip over it. aaand i got this.



obviously not beautifully plated cause i already began eating before taking the photo, my first time cooking fish too!

it has been quite delicious.

anyone else have some good seafood recipes?

That actually looks pretty f'n good.

My recipe? Get fish, any kind, some crisco, and fry that shit. Afterwards, chop some garlic, sautee` in the used oil, throw some white rice, and serve.

I have a variation of that.

First, I use the wild sockeye salmon (some of the farm-raised salmon have higher pollutant contents). Anything from Alaska is wild because the state prohibits fish farms.

Second, for a marinade, I use a mixture of ranch dressing and dijon mustard.

+1 on the brown rice.

For the rice and vegetables, may I suggest that you get one of those steamers that steams rice, vegetables, etc.? I have an Oster double-decker; similar models are available for $40 or less.

Another alternative if you are looking to take something to work with you to nuke for lunch: since salmon flakes easily, mix the flakes in with pasta (like tri-color rotini, bowtie, or mostaccioli) and tomato sauce (extra credit if you make it straight from tomatoes from the garden) and whatever garlic, spices, etc.

Also for a quick lunch, there are ziploc bags that are made to steam in.( http://www.ziploc.com/?p=b13 ) You can put the veggies and fish in together and microwave, everything steams in it's own juice. I have done this and added some lemon juice and then drizzle with white wine just before cooking. ~Mandy
