I've had a couple from your list but something not so common in the States is Ox.

I think we have a diverse enough crowd where they will have tons of crazy shat to add.

moose
buffalo
gator
bear
rattlesnake (yum)
snail
octopus
shark
blood soup (gross)
turtle ( I didn't know what it was)
frog legs
emu (it's like redmeat)

I have cooked:
tripe (both beef and buffalo)
pigs feet (pickled)
liver of just about any animal you can legally hunt/kill
pig of all kinds (I don't eat pork of any kind)

Ken I was raised in the south. I'll bring plack eyed peas to the bbq if you want. I also make collard greens and real fried chicken and cornbread.

Ostrich filets are awesome.

We get a lot of game here in TX, and I have to say that wild boar is probably the best of all. Also like quail, antelope, elk, yak, and bison-- but I don't really consider any of that stuff all that exotic.
This place is a few miles from my house: http://www.exoticmeats.com/home.aspx

I'm Swiss, and we eat a lot of veal. That's not really exotic, but it's very hard to find in groceries here in TX. Texans love dead pigs, and they let their cows grow big

I've tried most of whats already listed. Some other things I've eaten are:

Witchetty grubs
Kangaroo
Crocodile
Caviar
Goanna

Being half Dutch I've eaten a bunch of other dishes involving pig trotters, rollmops, tripe, and about anything you can get from a farm animal.

The shark steak I had was just slightly grilled, basically enough to heat it up. It was very very tender.

A couple weeks ago in Japan I ate...

- raw horse (surprisingly good, but i felt bad as I grew up with horses)
- Fugu which is a puffer fish (comes to the table still moving, and it's internal organs are poison)
- Cow stomach (not good, to chewy)
- Morey eel
- about 10 other kinds of fish that i didnt bother having them explain to me.

I'll try anything once.

Few weekends ago at my Filipino friends' graduation party I had blood pudding and red snapper heads. They were both delicious. Who knows what else I unknowingly ate there...I didn't know what a lot of it was.

Oh, and Brain tacos and tongue tacos from the white box van that drives around aurora
