Cold and snowy weekend....

..it's a perfect time to start using the smoker! I have 4 lbs of salmon I'm about to smoke, 6lbs of Jerky, and 2 slabs of ribs. All are super easy to do. I'll update this thread with my recipes and pics.

Jerkey is easy! I do whole meat, not ground. Buy beef of your choice. I'm using Round roast, others suggest London Broil. Some day I'm totally doing it with tenderloin. Slice into 1/4" thick strips, or 1/8" if you like your jerky dry.

Get Hi Mountain Jerky cure, mix seasoning and cure according to directions. Them put in a zip locked bag with the meat, mix. Then let sit in the frig for 24 hours.

Smoke using Mesquite or Hickory wood for 5-8 hours at 150-170 degrees.

Get a Bradley smoker so you can just set cook time and temp and leave the thing for 8 hours without touching it.

I was going to ask for some Jerky. But after my last post, you may marinade it in an unlikely flavor for me.

I have a HUGE charcoal smoker grill. But it's a big pain to control the temp and tend to it all day. Before I trackdays, I used to spend about two weekends a month grilling. Up early, get the grill going, smoke the ribs, chicken and brisket for about 10 hours. Yummy dinner!

I just don't have time for that kind of grilling. I'll need to get me one of them new fangled smokers.

that's why you have to go with something like the bradley. It's all digital. Just set the cook time, cook temp, and smoke time and walk about. Come back when its done.

Jerky went into the smoker an hour ago. It will be ready in about 5 hours.

I'm doing 6 lbs. 2lbs of Hickory, 2 of Mesquite, and 2 of original.

Here is a pic of them before I put them into the smoker.

NO, You leave that shit smokey and dark. it actually helps with the flavor. That way the walls won't saturate any more of the smoke. I pretty much only clean the drip pan and the racks.

thats what I do except after doing a few pieces of salmon recentely I swear I can pick up the salmon taste in the birds I did last
