Carmelized Bacon

Just came across this... am very tempted to try it out this weekend.


Ingredients:
1 lb bacon
1 1/4 cup brown sugar
2 tsp cinnamon
Solid dark chocolate

Preparation:
Cut each slice of bacon in half, crosswise. Mix sugar and cinnamon together and thoroughly coat each slice of bacon. Twist slices or leave flat, and place on rack in broiler pan in a 350DEG oven.

Bake until bacon is crisp and sugar is bubbly, 20-30 minutes. The sugar can burn quickly, so watch closely. Remove bacon pieces and put on a plate. Grate the dark chocolate over the bacon pieces. Place the plate in the refrigerator to cool and get more solid.

Store in a baggie or plastic container. That is, if you get far enough to NEED to store them.

Its good stuff.

I like to make sticky weinies. same process except wrap a cocktail frank with the bacon and sprinkle with brown sugar and bake. no chocolate though and use a toothpick to hold bacon on and then u have finger food.

While I'm no nutritionist, I don't believe that this recipe really isn't any worse from a "heart attack" perspective, than bacon normally is.

First, I believe it's healthier to bake bacon on a broiler rack.

And second, all you're really adding are sugars, which really don't contribute to heart type issues... cavities on the other hand, are a different matter entirely!

I'm still going to try it this weekend. Will try and remember to take some cell phone pics!
