Crawfish Boil!

http://www.nolacuisine.com/2009/04/0...h-boil-recipe/

Thought I'd share the above link, to a favorite NOLA blog of mine, featuring an excellent write up on boiling crawfish.

Am already conspiring with a buddy to order a 15-20lb shipment and boil the fuckers up early next month. Mmmmm!!!!

Never had crawfish before, actually I have no idea how to eat them! I've had this before with peel and eat shrimp that turned out really good too... after I figured out you had to peel the shrimp before you eat them

Looks to be some funky colors inside of that thing. I'm not to sure about the whole sucking under the shell of it's head and digging out "doo-doo" as she calls it... :errr:

It's actually fecal matter, you see the same thing with shrimp, the little black/blue lines on their backs. This is why some religions forbid eating crustaceans, they really are covered in shit.

Do they taste like a combo of shrimp and lobster?

Kind of similar to lobster though far less elegant and classy.
