New batch of Jerky going just went in the smoker

I just threw in 5lbs of jerkey into the smoker. Doing my normal meat and hickory cure, but this time I'm trying out Jim Bean wood. It's wood that was made from the barrels that the whiskey ages in. Can't wait to see what it tastes like!

I'll have to bring a bunch of it out on the boat this weekend

Good flavor, but I wasn't happy with the meat. i need to find a decent cur for this. The one I used was too chewy. I'm just going to do it with Filet next time

do not leave a lot on the meat when putting it into the smoker
