Are you talking about grilling or bbqing, bbqing requires smoke and loooooong cooking times. When I do a brisquit it's an all night affair. It goes on at 10 pm and is ready for lunch the next day. Typically the whole neighborhood ends up in my kitchen as they all wokeup to the smell lol

What kind of setup do you use?

I'm decent at grilling, as long as I know the grill and where the hot spots are. I've always wanted to try smoking.

Dave has a small smoker, and we have starved many many neighbors. We have done ribs, turkey breast, brisket, and salt. If you put a small foil dish of coarse sea salt in the smoker the salt is awesome in everything. Alton Brown did a good eats all about grilling and another on smoking.

That's what I got, black color. Looking to utilize the hell out of it. I will look at some of these links.

Tony, looking to use the grill more than doing the BBQ you are talking about, although I wouldn't mind that at all. I love some of the other grills I saw that had the little smoker section for woodchips.... I didn't feel like spending 2k on a grill though

Iphone app store has a "weber grill" app, that has all kinds of recipes and grilling tips. It is truly awesome.

I am a grilling geek, I have a weber gas grill, weber charcoal grill and a Brinkman smoker. and yes I have had all 3 fired up on an occasion or two

Which Weber Gas you working with? How do you like it so far? This is my first Weber grill, they obviously made a name for themselves. Looks like their Summit line is the tops..

Is there an advantage to using a charcoal grill in some circumstances?

Here is my charcoal setup

Weber Performer



for gas i'm running a weber e-320



and smoke, a simple brinkman


IMO charcoal will always taste better for steaks and burgers as the charcoal does impart a certain amount of flavor. But gas does a great job as well and is quick to use. I don't use lighter fluid on my coals, i use a weber chimney to get my coals going then dump them in the grill so it takes a little while.

so basicly it's:

everyday cooking weeknight dinners etc = gas

weekends or really doing a good steak right = charcoal

working magic on a 13 pound brisquit, 12 lb pork shoulder, ribs etc = smoker

The performer gives you the gas starter (I never use it, it rarely works well), the table and cart that the grill is built into, plus it has the nicer ash catcher on the bottom. also there's a swing out garbage can looking thing on the right side, for keeping your charcoal.

Brianne and I got the Weber 310 in blue when we got the house. It's a fantastically well built grill, but has a lot of hot spots. We've never done any smoking before...that looks and sounds interesting.
