The switch under the thermostat is probably the fan switch. You could start by disconnecting that and run the bike until it heats up to see if the switch closes. Use an ohm meter to see if the switch closes.

If it's overheating the fan should be on.

You should also check for an air bubble in the radiator. When the bike is cool, remove the radiator cap and fill with coolant mixture to the top. An air bubble at the top of the radiator can cause overheating and the fan to not work properly, as well as not exchanging fluid with the reservoir properly.
